Kunafa — known as künefe in Turkish and knafeh in Arabic — is a dessert that demands the right pan. The shredded kataifi dough needs to crisp evenly across the full base, the cheese underneath needs to melt through completely, and the whole thing needs to be flipped or served directly from the pan with the golden crust intact. Aluminum conducts the heat that makes this possible: fast, even, and consistent from center to edge.
